{"id":1906,"date":"2019-10-15T20:47:07","date_gmt":"2019-10-15T19:47:07","guid":{"rendered":"https:\/\/ldous.uk\/gcll19\/?p=1906"},"modified":"2019-10-15T20:47:07","modified_gmt":"2019-10-15T19:47:07","slug":"aubergine-courgette-parmesan-bake","status":"publish","type":"post","link":"https:\/\/ldous.uk\/gcll19\/2019\/10\/15\/aubergine-courgette-parmesan-bake\/","title":{"rendered":"Aubergine, courgette &#038; Parmesan Bake"},"content":{"rendered":"<p>A healthy version of a classic Italian bake.<\/p>\n<p><strong>Serves 4<\/strong><\/p>\n<p><strong>Prep time 30 mins<\/strong><\/p>\n<p><strong>Cook time 40-50 mins<\/strong><\/p>\n<p><strong>Kcal 227, Carbs 12.3g, Protein 18.2g, Fibre 8.5g, Fat 12.1g, Saturates 5.9g, Sugar 10.2g, Salt 0.9g<\/strong><\/p>\n<p><strong>Ingredients<\/strong><br \/>\n2 large aubergines (approx. 700g), cut into 1cm discs<br \/>\n2 courgettes, cut into 0.5cm strips<br \/>\n1 tbsp olive oil<br \/>\n1 onion, finely chopped<br \/>\n1 red pepper, finely chopped<br \/>\n2\u20133 cloves garlic, crushed<br \/>\n1 heaped tsp dried oregano<br \/>\n1 x 400g can chopped tomatoes<br \/>\n50g Parmesan cheese, finely grated<br \/>\n120g reduced fat mozzarella, thinly sliced<\/p>\n<p><strong>Method<\/strong><br \/>\n1. Preheat the oven to 180\u00b0C\/gas mark 4. Grill the aubergines and courgettes until lightly browned on each<br \/>\nside.<br \/>\n2. Meanwhile, add the oil to a pan with the onion, stirring occasionally for 5 minutes. Next, add the red<br \/>\npepper, stirring regularly for another 5 minutes.<br \/>\n3. Mix in the garlic, oregano and tomatoes, and simmer for 5 minutes.<br \/>\n4. Add some of the sauce to an ovenproof dish, top with aubergine and courgette slices, then add more<br \/>\nsauce and sprinkle with Parmesan cheese. Repeat until the final layer of aubergine and courgette, then<br \/>\ntop with the remaining sauce, Parmesan and, finally, the mozzarella slices.<br \/>\n5. Bake in the oven for 30\u201340 minutes until golden brown.<br \/>\n6.
